What We Do?
Based in Edmonton, Alberta, Lessig Ferments produces naturally fermented hot sauces, condiments, and beer vinegar.
In Canada, many farmers encounter challenges at the processing stage, where abundant harvests can be difficult to transform into stable, value-added products. At Lessig Ferments, our goal is to help bridge that gap by translating the bounty of our short growing season into artisan products through fermentation and preservation. By selecting ingredients at the peak of their season and applying thoughtful fermentation methods, we aim to preserve nutrients while enhancing the natural flavours of each ingredient.
Beyond our own products, we also offer white-label production, product consultation, and recipe development for restaurants, farmers, and other food businesses.
